Monkfish

 Sourced from the deep cold waters of the North Sea. We have monkfish available throughout the week. A great firm meaty fish, it works very well with strong flavours such as Asian or try cutting it into smaller pieces and coating with breadcrumbs for the ultimate monkfish scampi. To prepare, trim of the sinew and cut into portions, season well and cook until firm, leave to rest before cutting to ensure all the flavour is kept in !
